60 & 82

We recently held a family gathering at my mum and dad’s for my dad’s 60th and my grandmothers 82nd birthdays as they are just days apart. I was asked by my mother to assist her for the day which I thoroughly enjoyed, but my biggest responsibility was the production of some cupcakes for both in place of traditional birthday cakes. Thankfully I had just recently purchased The Hummingbird Bakery Cake Days book which if filled with fantastic recipes for such occasions. The only downside was that I had blown my mixer up two days prior to needing to make the cakes! As it was only a cheap mixer I wasn’t really surprised and it had served me well, but as my baking is becoming a more regular thing I thought it was time to invest. I have a very small kitchen so I needed something compact but good so after a bit of research I plumped for the Kenwood Prospero Compact KM265 mixer and I have not been disappointed.

I baked Tiramisu cupcakes (my dad adores Tiramisu) for my dad and Strawberry Daiquiri cupcakes for my grandmother. Both contained alcohol and as our family consists of adults and two twins who are not old enough for solids yet I thought they would make a great adult take on cupcakes. The Tiramisu cupcakes came out perfectly and I was really pleased with them (they were the first batch). Whilst the Strawberry Daiquiri cupcakes were not perfect (they sank in the middle just a smidge) they were salvageable, but I have now tweaked that recipe just slightly to ensure that it will not happen again! My new mixer did a sterling job and I was very pleased with the results.
